Fire-lover Samuel is Lagarto’s Head Chef

VENTURE Restaurants are very proud of their new Head Chef at Lagarto Brasserie, and quite rightly so.

He has moved from Char, where he had been since its opening, three years ago. Samuel Hernández delighted customers with his fine detail and innovative techniques, giving Char a fierce following of loyal customers looking for the ultimate gastronomic experience, and helping the restaurant receive a nomination for the best steak house in the Canary Islands!

Samuel works very closely with the local council, holding various, cooking master-classes, and he also represented Tenerife at Madrid Fusion, where he won first prize for best Tapa! He is now very excited to take on his next Venture, leading the kitchen at their sister restaurant, also in La Caleta, Lagarto Brasserie!

We spent a little bit of time with Samuel, to find out more behind this culinary master.

CW: When did you know you wanted to be a chef?

SH: I’ve always had a passion for cooking. 16 years ago, when I finished high school, I started in the gastronomic academy, and my love for cooking grew.

CW: What is your favourite food memory?

SH: One of my favourite food memories is my grandfather cooking us a typical Canarian dish of goat meat in salsa.

CW: How do you get your inspiration?

SH: My inspiration comes from learning. I never stop studying, and love to constantly develop new cooking methods and techniques.

CW: What is your favourite piece of kitchen equipment, or gadget?

SH: Fire! But I also loved working with the Josper Oven in Char; it’s amazing!

CW: Best piece of advice you would give a home enthusiast?

SH: My advice is to never be afraid of preparing any dish. With every mistake you make, you also learn.

CW: Best cooking tip for an aspiring chef, just getting into the business?

SH: Study as much as you can, read books and research the internet. It is a hard business, but it’s also a beautiful and comforting profession.

CW: Who in the food world do you most admire?

SH: Most definitely Ferran Adriá. He’s a Spanish chef from Catalonia, and is considered to be one of the best chefs in the world.

CW: What do you like to eat when you’re at home?

SH: I’m a simple person; I like to cook pasta.

CW: What is your proudest chef moment?

SH: When I was a part of Madrid Fusion, representing Tenerife.

CW: One last question; if you had one final meal, what would it be?

SH: For sure, it would be a Canarian dish; for example, pork cheek with sweet, Lanzarote white wine and vanilla – delicious!
